Sticky Date Pudding
Sticky date pudding is one of those quintessential desserts, that you just have to order when you see it on a menu.
Seeing it’s 2020 and we aren’t going out to eat. You can now make it at home with this super easy recipe. It’s the perfect Iso comfort food.

Sticky Date Pudding
Ingredients
- 250 gram pitted dates chopped
- 1.5 cup boiling water
- 1 tsp bicarbonate of soda
- 125 gram butter softened
- 0.75 cup brown sugar
- 1 tsp vanilla essence
- 2 eggs 60’s
- 2 cup SR flour
Instructions
- Place the dates and bi-carb soda in a bowl then pour the boiling water over them then let it stand until the dates are soft.(approx. 30minutes)
- Pre heat oven to 180c
- Spray the cake tin with cooking spray and line with baking paper.
- Beat butter, sugar & vanilla in the stand mixer until creamy.
- Add the eggs one at a time, beating after each addition.
- Add the date mixture & the flour a third at a time, mixing well after each addition.
- Spoon into greased cake tin and bake for 30 minutes, test in the center of the cake with a skewer. Cake is cooked when the skewer comes out clean.
