- 2 large oranges
- 6 eggs (60gms)
- 0.75 cup castor sugar
- 200 gram almond meal
- 1 tsp baking powder
- 3 tbsp gluten free plain flour
Wash the oranges, then place them in a saucepan, cover with cold water & cook for 1 1/2hrs or until soft.
Drain the oranges & let them cool.
Pre-heat oven 180C
Grease & line a 22cm springform tin.
Once cool cut the oranges into quarters & remove the pips.
Place the quartered oranges into a food processor & process until a they are a smooth pulp.
Place the eggs into the bowl of an electric mixer, beat them with the balloon whisk attachment until thick & creamy
Gradually add the sugar to the egg mix beating until the sugar dissolves.
Gently fold the orange pulp, almond meal, baking powder & gf flour into the egg mixture.
Pour into the prepared springform tin.
Place springform tin on to a baking tray & bake for 50min until golden brown.
Cool in the tin.
Serve with citrus syrup & a dollop of cream.
