They are super easy to make, perfect as a quick lunch box treat or after school snack.

This sure fire basic muffin recipe with step by step instructions will make your life that bit little easier.

They also freeze really well too.  Whip up a double batch, so you always have some on hand for when guest drop in.

10 Great Muffin Recipes

Muffin Base Recipe

Ingredients:

2 cups SR Flourapr2010 045

1 cup yogurt

1/3 cup oil

2 eggs

¾ cups castor sugar

1 tsp vanilla

Equipment:

Muffin tin, large bowl, medium bowl, whisk, measuring cups, cooking spray, knife, chopping board.

Method:

  1. Pre-heat the oven to 180C. Spray muffin tin with cooking spray.
  2. Place the flour & sugar in a bowl & stir to combine.
  3. Place yogurt, oil, vanilla, eggs into a bowl & whisk to combine.
  4. Stir the yogurt mixture through the flour until just combined.
  5. Add the chosen fruit or flavorings (see list) & mix together. Don’t over mix.
  6. Spoon mixture into a prepared 12 hole ½ cup or 6 hole 1 cup muffin tin tray.
  7. Filling up each muffin hole ¾ of the way.
  8. Bake ½ cup muffins for approx 15 min or until cooked when tested with a skewer. ( Cook 1 cup muffins for 30-35 min).

10 Great Muffin Flavors:

1: Blueberry.

1 cup fresh or frozen blueberries

2: Raspberry & white chocolate.

¾ cups fresh or frozen raspberries & 3/4 cups white chocolate chips.

3: Apple & Cinnamon with oats.

2 apples chopped or ¾ cup of pie apple, 1 tea spoon of ground cinnamon & ½ cups of rolled oats.(if you don’t like oats leave them out)

 4: Banana & Dark chocolate chip.

1 mashed medium ripe banana (3/4 cup) ¾ cup dark chocolate chips.

5: Passion Fruit.

½ cup fresh or tin passion fruit pulp (approx 6 passion fruits)

6: Lemon Poppy Seed.

2 teaspoons of grated lemon rind, ¼ cup poppy seeds, ¼ cup lemon juice.

Replace the vanilla with the lemon rind, soak the poppy seeds in the lemon juice for 10min. Then add the lemon poppy seed mixture at step 5.

7: Peaches &  Cream.

3/4 cup of fresh chopped peaches or 1/2 of a cup of chopped  drained canned peaches,  cream cheese cut in to 2.5cm pieces.  Fill you muffin hole ½ way pop in a cube of cream cheese then place a table spoon full of muffin mixture on top.

8:  Cranberry & Apple.

2 apples chopped or ¾ cup of canned pie apple, ½ cup of dried cranberries.

9: Cinnamon & Jam Doughnut.

¼ cup of Raspberry jam, 1 tablespoon of cinnamon sugar. Fill you muffin tin ½ way pop in a  teaspoon of jam then place a table spoon full of muffin mixture on top. Sprinkle with cinnamon sugar.

10: Triple Chocolate.

1/3 of a cup of each,  white chocolate chips, dark chocolate chips & milk chocolate chips, this will make 1 cup.  1 tablespoon cocoa powder,  1 cup of sour cream.  Replace the yoghurt with the sour cream & add the shifted cocoa power to the flour & sugar mixture. Add all of the chocolate chips at step 5.
